Botanist.
The Fairmont Pacific Rim Hotel is my absolute favourite hotel in Vancouver, and now that they have added their amazing restaurant, Botanist, it is beyond!
It feels like you are walking into a different world when you enter the restaurant -it is decorated beautifully, pairing natural elements with the most upscale decor, it is like a dream. You can dine in the Garden (which has over 50 different types of plant species!) or venture further into the restaurant where accents of soft pink & blue welcome you. And that is just the beginning! The food is truly the star - make sure to come hungry, you will not be disappointed!
Their amazing in house made fougasse bread & whipped butter is the perfect teaser as to what is to come - No matter what you order on the menu, I promise, Chef Hector Laguna will not let you down!
I always get the hand cut mushroom tagliatelle ~ it is absolutely delicious! More favourites are the burrata & tomato heirloom salad and the poached halibut. Their cocktails are also amazing (the bird is actually a signature cocktail, how fun is that!) and the service is impeccable.
Heading to Bontanist is an experience like no other, with live music and great atmosphere, I highly recommend going in, even if it is just for a cocktail (they are opening a Champagne Bar soon, stay tuned) if you are visiting Vancouver or if you are a local - It is a magical spot.
